Making community potluck events more engaging

We've been doing community potluck events for years, but they're starting to feel a bit stale. Same people, same dishes, same conversations. How can we make community potluck events more engaging and attract new participants? I'm thinking about adding themes, activities, or changing up the format somehow. What creative twists have you put on potlucks to keep them fresh? Also, how do you encourage people to try new recipes or bring dishes outside their comfort zone without making it feel competitive?
