I don't mind paying for quality, but I hate the subscription model or constant microtransactions. What are some good single purchase mobile games that actually give you a complete experience? I'm talking about games where you pay once and get access to all content unlocked, no hidden costs later.

For single purchase mobile games, I highly recommend Papers, Please. It's a unique puzzle/document checking game with a great story. You pay once and get the complete experience. No additional purchases needed. The mobile port is really well done too.

FTL: Faster Than Light is another excellent single purchase mobile game. It's a spaceship management roguelike that's incredibly deep. The mobile version includes the Advanced Edition expansion for free. You get all content unlocked from the start, no microtransactions whatsoever.

Don't Starve: Pocket Edition is worth every penny. It's a survival game with a unique art style and tons of content. Single purchase, no IAP. The developers keep updating it with free content too. It's one of those mobile games with all content unlocked that actually feels substantial.

If you like strategy games, XCOM: Enemy Within is a premium single purchase. It's the full console/PC game adapted for mobile. No cut content, no microtransactions. Just a complete tactical experience. It's definitely one of the mobile games that feel like console games.

Kingdom Rush series (the original trilogy) are all single purchase tower defense games with no IAP. They're considered some of the best in the genre. Each game is complete when you buy it. The newer ones have gone freemium which is disappointing, but the older ones are solid.

Baldur's Gate 1 and 2, Icewind Dale, and Planescape: Torment are all available as single purchases on mobile. They're the complete PC RPG experiences with no additional costs. These are definitely mobile games for adults without IAP if you're into deep RPGs with complex stories.
