Specifically looking for mobile games with controller support that have depth and substance. I've tried a few that claim to support controllers but then the implementation is half baked or the game itself is just too simple to justify using a controller.

I've tried Dead Cells and you're right, it's perfect. The controls are tight and responsive. Pascal's Wager sounds interesting too, I love souls-likes.
I haven't tried emulators yet, but that's a good point. I could play actual console games on my phone. The controller support would obviously be perfect for those.
For competitive games, I've been playing Call of Duty Mobile and it does feel good with a controller. The matchmaking seems fair enough, though I do wonder if I'm at a disadvantage against touch players with gyro aiming.
