I'm in a major dinner rut, relying on the same three pasta dishes and frozen pizza every week because I'm exhausted after work. I need ideas for easy weeknight dinners that are genuinely quick to prepare, use mostly pantry staples or minimal fresh ingredients, and can please both adults and a somewhat picky eight-year-old.
