Some gourmet cooking techniques seem intimidating but are actually quite approachable once you understand them. What gourmet cooking techniques have you tried that turned out to be easier than expected?

I'm looking for techniques that sound fancy but are quite doable with a little practice - things like making your own pasta, proper searing, making stocks from scratch, etc. What gourmet cooking techniques have you incorporated into your regular cooking that felt like a game-changer?
