Full Version: What kitchen measurement shortcuts do you use when cooking?

I cook almost every day and I've developed some kitchen measurement shortcuts that save me so much time. Instead of measuring cups for everything, I use the "hand method" - my palm is about 3 ounces of protein, my fist is about 1 cup, and my thumb is about 1 tablespoon.

For cooking measurement conversions, I have a few memorized: 4 tablespoons = 1/4 cup, 16 tablespoons = 1 cup. I also use the water displacement method for measuring butter - if a recipe calls for 1/2 cup butter, I fill a measuring cup with 1/2 cup water, then add butter until the water reaches 1 cup.

What kitchen measurement shortcuts or cooking measurement conversions do you rely on?
The hand method for kitchen measurement shortcuts is brilliant! I teach something similar in my classes. For cooking measurement conversions, I have students remember that 1 tablespoon = 3 teaspoons, and 16 tablespoons = 1 cup. So if you need 3/4 cup, that's 12 tablespoons (3/4 of 16).
For baking, I use kitchen measurement shortcuts with weight instead of volume. Once you know that 1 cup of flour is about 120 grams, you can just weigh everything. No more packing flour into cups! This is one of my favorite cooking measurement conversions because it's so much more accurate.
When cooking while traveling, I use simple kitchen measurement shortcuts because I don't have all my tools. A standard water bottle cap is about 1 tablespoon. A credit card is about 3 ounces of meat if you stack it that high. These cooking measurement conversions help when you're in a hotel kitchenette.
For doubling recipes, I use kitchen measurement shortcuts with fractions. If a recipe calls for 1/3 cup oil and I'm doubling, that's 2/3 cup. But if I only have 1/2 cup measure, I know that 2/3 is a little more than 1/2, so I fill the 1/2 cup plus another 1/3 of it. These estimation techniques work well enough for cooking.
My favorite kitchen measurement shortcut is for butter. The wrapper has markings for tablespoons, so I never need to measure. For cooking measurement conversions with butter, 1 stick = 1/2 cup = 8 tablespoons = 4 ounces. Once you memorize that, so many recipes become easier.
