fiber is not one thing it splits into soluble and insoluble and your gut may react differently to each so a slower ramp and starting with soluble types can help.
Maybe fiber is not the only culprit what about hydration sleep or dairy or caffeine that stack up by evening could that be part of it?
Perhaps the point is not to fix the gut but to discover a rhythm with fiber that matches your evenings and energy patterns.
Try logging what you eat and how you feel and add fiber sources one at a time slowly switch to well cooked vegetables oats and water
Some people notice the gut microbiome shift when fiber rises so symptoms can rise at first and then settle as bacteria adjust.
Beans and lentils can bloat less if you soak rinse and cook longer you might try a few different legumes to see what sticks.
