After a long day at the office, my biggest challenge is finding the motivation to cook healthy weeknight dinners that don't rely on processed shortcuts or take an hour to prepare. I'm stuck in a rut of rotating between the same three simple pasta and stir-fry recipes, and I'm looking for inspiration for meals that are genuinely nutritious, satisfying, and can realistically be made in under 45 minutes with mostly fresh ingredients. What are your go-to recipes or cooking strategies that help you get a balanced meal on the table without it feeling like a chore?
